Chocolate Muffin

Ingredients:

- 3 cups flour

- 1/2 cup cacao

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- 4 teaspoon baking powder

- 1 1/3 cup granulated sugar

- 10 tablespoons unsalted butter, melted and cooled slightly

- 1 cup whole milk, at room temperature

- 1 cup creme fraiche or sour cream ( I prefer sour creme), at room temperature

- 2 large eggs, at room temperature

- 1 large egg yolk, at room temperature

- 200 gr dark (or with white chocolate), coarsely chopped

Direction:

First, heat the oven to 180°C. Lightly oil the top of standard 12 cup muffin tins and line with paper baking cups .

In a large mixing bowl: sift together the flour, baking powder, baking soda and salt, mix well.

In another mixing bowl: whisk together the sugar, butter, milk, sour creme, eggs, egg yolk until well combined.

Pour the wet ingredients into the dry and fold gently with a rubber spatula just until the dry ingredients are mostly moistened (the batter will be lumpy), there should be quite a few streaks of dry flour. Add the chocolate and fold gently.

Fill the muffin cups, the batter should mound higher then the rim of the cups. Bake until the muffins spring back lightly when you press the middle, 30 to 35 minutes. Enjoy!

MUFFIN COKLAT

Bahan:

- 3 cangkir tepung

- 1/2 cangkir kakao/coklat bubuk

- 1/2 sdt baking soda

- 1/2 sdt garam

- 4 sdt baking powder

- 1 1/3 cangkir gula halus

- 10 SDM mentega, dicairkan dan tunggu sampai agak dingin

- 1 cangkir susu cair, suhu ruangan

- 1 cangkir creme fraiche atau sour cream ( saya lebih suka sour creme), suhu ruangan

- 2 telur besar, suhu ruangan

- 1 kuning telur besar, suhu ruangan

- 200 gr coklat hitam atau putih, dicincang kasar

Cara membuat:

Pertama, panaskan oven 180°C. Oles tipis cetakan standard 12 muffin kemudian letakkan mangkuk kertas muffin.

Di mangkuk besar: campur tepung, baking powder, baking soda dan garam, aduk rata.

Di mangkuk lain: kocok gula, mentega, susu, sour creme, telur, kuning telur sampai tercampur rata.Tidak perlu kocok dengan mixer listrik, cukup dengan mixer tangan.

Masukkan adonan basah ke adonan kering dan aduk pelan (gerakan melipat) dengan spatula hanya sampai adonan kering menjadi lembab (adonan akan menggumpal), akan terlihat sedikit tepung yg tidak tercampur, biarkan, jangan terlalu banyak diaduk. Tambahkan coklat dan aduk lipat pelan-pelan.

Isi penuh mangkuk muffin, agar tinggi adonan sebaiknya melebihi batas mangkuk kertas. Panggang muffin kurang lebih 30-35 menit (tergantung oven). Muffin matang bila mental sedikit jika ditekan ditengah.
